Backwater prawns roasted with ginger, kanthari chilli and a touch of coconut vinegar.
Each batch starts at the Kochi fish market before sunrise. Spices are roasted and ground by hand, and everything cooks slowly in coconut oil. No artificial colours, no preservatives and no shortcuts.
Seer fish and backwater prawns are bought the same morning, then cleaned and fried crisp before they go into the masala.
Kashmiri chilli, mustard and fenugreek from Idukki are roasted in small lots and ground by hand.
Cold-pressed coconut oil tempered with curry leaf and garlic. It gives a Kerala pickle its flavour.
Every batch rests so the spice soaks through. Then it is hand-filled into glass jars and sealed.
